Brown rice is considered whole grain because it contains all the parts of sliced rice grains. The outer covering, called bran, is rigid and contains fiber. The endosperm, the starch portion of the rice grain, is located under the bark and around the germ. Bacteria are a reproductive part of rice grains, rich in vitamins and minerals. In white rice, bran is removed during processing, but, in brown rice, all the ingredients remain and are responsible for many of its nutritional benefits.

Brown rice is rich in minerals like carbohydrates, calcium, iron, phosphorus, and potassium, and vitamin E and B complex vitamins. A cup of brown rice also contains 6.5 grams of dietary fiber. According to the Harvard School of Public Health experts, dietary fiber has many health benefits. It helps to prevent constipation by keeping the stool soft and reduces your risk of digestive diseases such as diureticular disease. It also lowers your blood levels to low-density lipoprotein, called bad cholesterol, which may reduce your risk of cardiovascular disease. Using fiber protects you from type 2 diabetes, potentially reducing insulin levels in your blood. Harvard experts estimate that a high-fiber diet can reduce the risk of diabetes by up to 36%.

  • Salt and black pepper
  • ¼ cup of brown rice
  • ¼ medium yellow onion
  • red bell pepper ¼ medium
  • ¼ medium cucumber
  • 2 0z artichoke heart
  • 1 tablespoon parsley
  • ½ tablespoon feta cheese
  • 1 tablespoon sliced black olives
  • ½ cup brown rice, cocked
  • 1 tablespoon olives oil
  • ½ tablespoon white vinegar

  • Boil rice in salted water
  • Cut onion, red bell pepper, cucumber, artichoke heart, parsley into small pieces
